Holiday Chef's Corner: The Dairy Godmother's Oaties

Liz Davis offers a recipe for one of her favorite treats.

If you like to keep busy in the kitchen during the holidays, we have some fun new recipes for you to try out this week thanks to members of Alexandria's culinary community. 

Liz Davis, owner of The Dairy Godmother, sent in this recipe for her delicious oaties. 

The Dairy Godmother's Famous (OK, somewhat popular locally) Oaties

Ingredients:

  • 8 ounces unsalted butter
  • 2 cups light or dark or combination brown sugar
  • 4 cups oatmeal,(we use old fashioned but my mom used quick. Not instant.)
  • 2 teaspoons baking powder
  • 1 teaspoon salt

In a heavy saucepan, melt the butter, add sugar and stir until the mixture boils. Set aside about 20 minutes to cool a bit.

Add rest of ingredients and stir.

We press into little tart tin but my mom just used a buttered baking dish. A piece of parchment or foil on the bottom would help get them out.

Bake 325 degrees until it bubbles in the center. Cool.

They cut crumbly if you use a baking pan. That's why we use little tart dishes. They are still good that way!
